It's that time of year when so much of the ground cover in the woods is available, nutrient rich from dormancy, and edible. This particular delicacy has an unfortunate very short season.
Very much like a spring onion but more tender and with a sweeter flavor profile.

PLEASE NOTE:
Since ramps are wild and take 7 years to reach maturity, they need to be harvested sustainably. Some bunches will be green leaves and stems without the bulbs because the bulbs are too small and root systems not yet established.
