Pork Chops with Autumn Apples


  • 2 Bone-in pork chops

  • 2 Medium to large seasonal apples of your choice cut into chunks

  • 2 Onions, quartered

  • 6 slices of bacon, sliced into lardons

  • Salt, pepper, thyme (or Italian Seasoning) to taste

  • 1 tsp. Olive oil


    1. Pre-heat oven to 350 degrees

    2. Heat a cast-iron* pan on stove, drizzle with tsp. of olive oil, cook bacon until crispy

    3. Meanwhile, use a mallet to pound pork chops and tenderize

    4. Season both sides of the meat with salt and pepper

    5. Place cooked bacon aside to drain

    6. Reserve one tbsp. of bacon fat in cast-iron pan, set remaining aside for future use if you wish

    7. Add pork chops to pan

    8. Sear on each side for 4-5 minutes (should be golden brown in appearance)

    9. Remove pork chops from pan and remove pan from heat

    10. Place prepared apples and onions in the pan (season with additional salt and pepper)

    11. Place pork chops back in the pan with apples and onions

    12. Sprinkle with thyme (or Italian Seasoning)

    13. Place pan in oven and allow to bake for additional 20 minutes

    14. Serve pork chops with apple and onion mixture on the side

        *If you do not own a cast-iron pan, you may prepare ingredients steps 2-9 as written with any pan and then use an oven-proof casserole or baking dish in steps 10-13.
